Cinnamon-Nutmeg-Oatmeal-Chocolate-Chip-Pecan cookies:
INGREDIENTS:
- 1 Cup butter (never margarine). That's two sticks (I always forget).
- 1 Cup brown sugar
- 1 Cup granulated white sugar
- 2 eggs
- 1 1/4 Cup flour
- 1 tsp. baking soda (I often use baking powder and it works nicely)
- 1/2 tsp. salt
- 1/2 tsp. vanilla (you can add more, but stay below 1 tsp.)
- 3 Cups oats (use the real oats, the 5-minute kind, not quick-oats)
- Lots of cinnamon
- Lots of nutmeg
- Lots of pecans (chopped, but not too finely)
- Chocolate chips
DIRECTIONS:
- Preheat oven to 350 degrees (F).
- Mix butter, sugar, salt, and eggs in a large mixing bowl.
- Mix in flour, then vanilla and baking soda/powder.
- Add lots of cinnamon & nutmeg (more cinnamon than nutmeg),
to taste (I never bother measuring).
- One cup at a time, mix in oats.
- Add chocolate chips (perhaps less than usual because of
the pecans), and chopped pecans.
- Try not to eat too much of the batter.
- Spread in tablespoon-size balls; if batter is dry, push
down a bit to get it started spreading.
- Bake for around 12 minutes at 350. (I heartily recommend
a test batch, to test the consistency. Depending on the size
of the eggs & how sifted the flour is, the cookies might
spread quickly and cook faster. This recipe seems
particularly responsive to things like that. So caution here
is a Good Thing.)
- Let cool, but not for too long, eat piping hot with milk.
Offer to friends, lovers, or potential lovers.

JD Paul's World Famous Apple Kuchen Recipe
DOUGH
- 1 pkg. yeast
- 1/4 cup water, warm
- 1/4 cup sugar (I use white granulated for this)
- 1 cup milk, scalded
- 1/4 cup shortening (butter) -- that's half a stick
- 1 tsp. salt (I use less, say 1/2 tsp)
- 3 1/2 cup flour (wheat flour goes real well here)
- 1 egg
- Soften yeast in warm water.
- Combine scalded milk, sugar, shortening, and salt.
Cool to lukewarm.
- Add 1 cup of flour; beat well.
- Beat in softened yeast and egg.
- Gradually add remaining flour, beating well.
- Cover and let rise in warm place until double in
volume. (1 1/2 to 2 hours.)
TOPPING
- Apples: lots and lots -- I never really paid attention to
how many. Best estimate: 5 good-size apples for a batch the
generic size of this recipe. I use Granny Smiths, which are
GREAT. Others are possible, and still taste good (but
probably require more than 5). I recommend: go for the Granny
Smiths.
- 1 1/2 cup brown sugar
- 2 tsp Cinnamon (this is what the recipe I inherited says
-- but I use about 2 tbsp. let's just say: Lots.)
- 4 tbsp flour (wheat flour is good here, but whatever)
- 4 tbsp butter
- (NB: I use this as an aproximate guideline. I make
about twice as much for the amount of dough I make, since I
like lots of brown sugar and cinnamon.)
- Peel and slice apples (thin slices, 1/4" thickness at most).
- Mix together sugar, cinnamon, and flour. Work in butter.
- Place now-risen dough on greased (doesn't need to be too
heavily greased) cookie sheet, pat out as for pizza (don't
roll). Dough should be 1/4" thick, perhaps a bit more, but
not thicker than 1/2".
- Arrange apples in rows, pressing lightly into dough.
- Spread sugar-cinnamon mix over apples.
- Bake at 350 degrees F for 30 min.
- Serve, share, and enjoy.
