JD Paul's Semi-Famous Recipes


JD Paul's disgustingly rich Cinnamon-Nutmeg-Oatmeal-Chocolate-Chip-Pecan cookies:

INGREDIENTS:

DIRECTIONS:

  1. Preheat oven to 350 degrees (F).
  2. Mix butter, sugar, salt, and eggs in a large mixing bowl.
  3. Mix in flour, then vanilla and baking soda/powder.
  4. Add lots of cinnamon & nutmeg (more cinnamon than nutmeg), to taste (I never bother measuring).
  5. One cup at a time, mix in oats.
  6. Add chocolate chips (perhaps less than usual because of the pecans), and chopped pecans.
  7. Try not to eat too much of the batter.
  8. Spread in tablespoon-size balls; if batter is dry, push down a bit to get it started spreading.
  9. Bake for around 12 minutes at 350. (I heartily recommend a test batch, to test the consistency. Depending on the size of the eggs & how sifted the flour is, the cookies might spread quickly and cook faster. This recipe seems particularly responsive to things like that. So caution here is a Good Thing.)
  10. Let cool, but not for too long, eat piping hot with milk. Offer to friends, lovers, or potential lovers.
  11. Enjoy.


JD Paul's World Famous Apple Kuchen Recipe

DOUGH

  1. Soften yeast in warm water.
  2. Combine scalded milk, sugar, shortening, and salt. Cool to lukewarm.
  3. Add 1 cup of flour; beat well.
  4. Beat in softened yeast and egg.
  5. Gradually add remaining flour, beating well.

  6. Cover and let rise in warm place until double in volume. (1 1/2 to 2 hours.)

TOPPING

  1. Peel and slice apples (thin slices, 1/4" thickness at most).
  2. Mix together sugar, cinnamon, and flour. Work in butter.

  3. Place now-risen dough on greased (doesn't need to be too heavily greased) cookie sheet, pat out as for pizza (don't roll). Dough should be 1/4" thick, perhaps a bit more, but not thicker than 1/2".
  4. Arrange apples in rows, pressing lightly into dough.
  5. Spread sugar-cinnamon mix over apples.

  6. Bake at 350 degrees F for 30 min.

  7. Serve, share, and enjoy.
